As I am not gluten-free I used Dave's Killer Bread (whole grain) for the topping, and a couple tablespoons of beer in the cheese mixture. Here are some suggestions:
You could mix all the ingredients in a bowl and pour them into a freezer-safe container. Then mix the content every 1/2 hour until set. It probably will have a different consistency, more like a granita, but the flavor will be the same. Another option would be to mix all the ingredients in a bowl and pour the mixture into popsicle molds, then freeze until set.You could add the caramelized peanuts to the mixture for a more interesting treat.

I don't have an ice cream maker any other way ...

I don't have an ice cream maker any other way I could make it?

Hello Mais,

(i will check out your other amaranth posts soon!)

I used adzuki beans instead of the black beans, and I skipped the cheese.

The main mistake I made was to cook amaranth with too much water (although the packaging said 3:1, I did 1.5:1, but I should've taken your 1:1 ratio), so they turned out more like little crepes...and therefore harder to flip over......but for a first attempt they turned out so delicious (although not much pretty) that i ate half of them then and there and my stomach felt full for four hours later! I froze the rest (and they defrost easily).

Lovely recipe....just warning not to make your amaranth too runny or else you get crepes.

Oh, and I also added ground linseed. It is one I make often.

Some of the rules with Agar agar are: the flakes need to be whisked and simmered in the liquid you are trying to gel for about 5 minutes. Then to avoid clumps, it is best to either mix the mixture in a blender or pass it through a sieve. Agar solidifies the liquid once it cools off in the refrigerator.
Did you use flakes or powder? This could explain the difference in the consistency. This recipe was created with Eden Agar Agar Sea Vegetable Flakes.
